I Understand Weekends

Hello!

Adjusting to my new schedule is going to take me a while. I apologize for the lack of posts and communication around here - and particularly the lack of talk about anything but school. Hopefully everything will balance out soon. I'll tell you what - waking up at 4:45am is HARD! But I survived my first week of classes and I'm absolutely loving it. Chef Danny {my "professor"} is amazing. He's so talented and I feel very lucky to get to study under him. We did lots of introductory stuff and basic training on kitchen policies this week. Operations are very rigid and militaristic, but not in a bad way. We all line up for inspection before class to make sure our uniforms are up to code - it's awesome. One thing I really didn't expect is that grades are very important even after graduation for culinary school. They include not only your cooking abilities but your professionalism {i.e. neatness of uniform, showing up on time, interaction with others, etc.}. I've never been a straight A / 4.0gpa kind of student but this time around I'm determined to change that. So far so good! I got full marks {100%} on our chocolate chip cookie practical today!

I've been doing my best to prepare everything I need for class the evening before. Ironing my uniform, studying, making a breakfast/lunch... But I could definitely use some suggestions for easy/quick to make and pack food goods that are still healthy. Got any ideas? Also, I'll admit, I'm pretty worried about how much sugar I'm going to be eating. Obviously I need to taste test my products, which is great and all, but I need to make sure I exercise self-control by not eating 1000 cookies everyday. OH! That reminds me - my physical therapist cleared me for running yesterday {YAY!} so that will definitely help with keeping off any taste testing weight I put on.

Okay well I'm exhausted and haven't felt this brain dead in ages so I'm going to go. Sorry if I'm not making any sense or rambling. Today was the first time in as long as I can remember that I woke up and thought  - thank.god.it's.friday! After years of working from home I finally understand what all this hype about the weekend is about!
